Which fabric for a kids jacket?

Parkas and coats work well in softshell, boiled wool, bouclé or rain jacket fabric; cardigans in knit, waffle jersey or French terry.

Can I make the vest warmer?

The Layer up Vest is always lined, and you can add an interlining such as thermal fleece.
